Lopo de Sousa Freitas was one of the first people to believe in growing quality wine in Bairrada and the ‘face’ of São Domingos since 1970. Only made in the best years and using the best Cerceal and chardonnay grapes, this wine is dedicated the man who drove the São Domingos winery to become the quality winery they are today.

Tasting Notes Very expressive aroma, with elegant floral notes, light minerality and a discreet toastiness. Creamy and full in the mouth, very fine bubbles in balance with the delicate mousse, a very distinct and refined sparkling wine.

Vinification/Maturation The harvest for this sparkling wine begins in early August, when the grape has high acidity and low sugar. The grapes are harvested by varietal and kept separated in order to optimize the structure and complexity of the lots. After inoculation with selected yeasts, fermentation occurs in stainless steel tanks. In november, the oenology team prepares the base wine highlighting the individuality of the grapes character. After the second fermentation in bottle the wine is aged in cellars on the yeast for a 16 months at a temperature of 12°C and thus find the perfect balance of weight and flavor. The bottle then undergoes remuage for 2 months before disgorging glacée releases the yeast and then a small amount of expedition liqueur is added to finish the wine. The finished wine is held 2 months before market release.

Terroir

Produced only in years of exceptional quality with the best Chardonnay and Cerceal grapes planted in vineyards located in Mogofores, known for high level sparkling wine. The vines undergo some early interventions, obtaining an average yield of 8 ton / ha. The grapes are picked and placed in 20kg boxes that are refridgerated for 24 hours at 12ºC. After the grapes are sorted and pressed.
