Our wine cellar features the latest technology in combination with traditional ways of winemaking. All grapes that arrive in the ‘Adega’ are hand-picked and follow the process of soft maceration in order to assure superior wine quality. This process is applied to each type of grape separately to maximize the potential of each individual grape variety.

Tasting Notes Deep, concentrated plummy-red tones with complex aromas. Mature well integrated fruit that is full-flavoured. Good concentration, with soft tannins that give balanced structure. Should be served at 14 a 16ºC;
Vinification/Maturation Grapes are hand-selected on a purpose-built selection table; The fruit is instantly cooled to 10ºc on arrival at the winery; Musts are ‘cold-soaked’ for up to 2 days prior to fermentation; Innoculation with selected yeasts; Prolonged fermentation and maceration in ‘lagares’ (traditional open fermenters); Aged in new French oak barriques

Magnesian sedimentary loam soils, ranging from sandy-loam to clay-loam withmarked horizons. Many areas comprise soils with laminar clay-schist-likecharacteristics. Whilst very low in organic matter, the acidic, or slightly acid soilshave average fertility and a high water retention capacity.
