Tasting Notes A bright, pale yellow, highlighted by green accents. An intense nose of citrus and green apples greet you in the glass, spritzed by dewey grass. Crisp, light and ultimately refreshing.
Vinification/Maturation Fermentation starts with active dry yeast (Cerevisiae) at temperatures between 14-16 degrees Celsius (57-61 Fahrenheit); fermentation is managed by a reductive method with minimal aeration, protecting the wine from oxidation. The wine is aged on its lees in stainless steel vats for 2-3 months before bottling
