São Domingos Red Brut

By the virtue of our rich gastronomy, from north to south of Portugal, São Domingos Sparkling Tinto has achieved great success among our customers. Once again the queen grape Baga showcases its unique and delicious versatility, a true companion of the table, creating unique moments.

Tasting Notes A beautiful pink foam and a very fruity aroma with dark berries and fresh strawberries. The palate is full, with nice acid that balances out the fruit with a refreshing and persistent finish. Makes an excellent and interesting addition to charcuterie and cheese plates.
Vinification/Maturation The harvest for this sparkling wine begins in early August, when the grape has high acidity and low sugar. The grapes are harvested by varietal and kept separated in order to optimize the structure and complexity of the lots. After inoculation with selected yeasts, fermentation occurs in stainless steel tanks. In november, the oenology team prepares the base wine highlighting the individuality of the grapes character. After the second fermentation in bottle the wine is aged in cellars on the yeast for a 16 months at a temperature of 12°C and thus find the perfect balance of weight and flavor. The bottle then undergoes remuage for 2 months before disgorging glacée releases the yeast and then a small amount of expedition liqueur is added to finish the wine. The finished wine is held 2 months before market release.

Grapes coming from the countries of São Lourenço do Bairro,Vilarinho do Bairro and Ventosa do Bairro, grown in sandy clay soils, with a planting density between 3500 to 4500 plants perhectare are trellised using Guyot upward pruning. Thevineyards are monitored throughout the growing season, from pruning to harvest, to ensure healthy vines and high quality grapes. average of 1 to 10 tons per ha. The grapes are harvested into 20 kg boxes that are chilled in a refrigerator for 24 hours. Then the grapes sorted before being slowly and gently pressed.
